Prawn, Pesto & Pancetta Pasta

How to make: Prawn, Pesto & Pancetta Pasta with your own home made pesto

To make Prawn Pesto & Pancetta Pasta:

  1. Add a generous amount of salt to some water and bring to the boil in a pan
  2. Add your pasta
  3. To a food processor add your fresh basil, olive oil, parmesan, fresh garlic and blend into a paste.
  4. Cook your pancetta in a frying pan and in the same pan, toast your pine nuts. Once toasted and a nice brown colour put your pine nuts to one side.
  5. De-vein and peel your prawns then fry in the pan you have just cooked the pancetta and pine nuts in.
  6. Warm the tomatoes in the same pan.
  7. Once the pasta is al dente drain, mix in some salted butter and your home-made fresh pesto paste, then add the cooked prawns, pancetta, pine nuts, tomatoes and lightly dust with parmesan.
