Buttery pine nuts, acidic tomatoes, salty pancetta, sweet prawns & tangy pesto, perfect accompaniments for this prawn, pesto & pancetta dish.
Ingredients
- Pasta of your choice
- Prawns (I used shell on)
- Pine Nuts
- Olive oil (I used The Olive Architects Basil infused OIive Oil)
- Fresh Garlic
- Fresh Basil
- Parmesan
- Pancetta
- Cherry tomatoes
- Butter
How to make: Prawn, Pesto & Pancetta Pasta with your own home made pesto
- Salt some water and bring to the boil in a pan and get your choice of pasta in.
- To a food processor add your fresh basil, olive oil, parmesan, garlic and blend.
- Cook your pancetta and in the same pan toast your pine nuts, once toasted put to one side.
- De-vein, peel your prawns and fry in the pan you have just cooked the pancetta in.
- Warm the tomatoes in the same pan.
- Once the pasta is al dente drain, mix in butter and your home made pesto, then add the prawns, pancetta, pine nuts, tomatoes and lightly dust with parmesan.
