Prawn, Pesto & Pancetta Pasta
Buttery pine nuts, acidic tomatoes, salty pancetta, sweet prawns & tangy pesto, perfect accompaniments for this prawn, pesto & pancetta dish.

How to make: Prawn, Pesto & Pancetta Pasta with your own home made pesto

  1. Salt some water and bring to the boil in a pan and get your choice of pasta in.
  2. To a food processor add your fresh basil, olive oil, parmesan, garlic and blend.
  3. Cook your pancetta and in the same pan toast your pine nuts, once toasted put to one side.
  4. De-vein, peel your prawns and fry in the pan you have just cooked the pancetta in.
  5. Warm the tomatoes in the same pan.
  6. Once the pasta is al dente drain, mix in butter and your home made pesto, then add the prawns, pancetta, pine nuts, tomatoes and lightly dust with parmesan.
