Buttery pine nuts, acidic tomatoes, salty pancetta, sweet prawns & tangy pesto, perfect accompaniments for this prawn, pesto & pancetta dish.
Ingredients
- Pasta of your choice
- Prawns (I used shell on)
- Pine Nuts
- Olive oil (I used The Olive Architects Basil infused OIive Oil)
- Fresh Garlic
- Fresh Basil
- Parmesan
- Pancetta
- Cherry tomatoes
- Butter
How to make: Prawn, Pesto & Pancetta Pasta with your own home made pesto
To make Prawn Pesto & Pancetta Pasta:
- Add a generous amount of salt to some water and bring to the boil in a pan
- Add your pasta
- To a food processor add your fresh basil, olive oil, parmesan, fresh garlic and blend into a paste.
- Cook your pancetta in a frying pan and in the same pan, toast your pine nuts. Once toasted and a nice brown colour put your pine nuts to one side.
- De-vein and peel your prawns then fry in the pan you have just cooked the pancetta and pine nuts in.
- Warm the tomatoes in the same pan.
- Once the pasta is al dente drain, mix in some salted butter and your home-made fresh pesto paste, then add the cooked prawns, pancetta, pine nuts, tomatoes and lightly dust with parmesan.
