Ingredients
- Assorted Seafood (I ordered from The Fish Society)
- Monkfish Tail
- Prawns (Shell on or off)
- Clams
- Mussels
- Thai Jasmine Rice
- Red & Green Peppers
- Large tomatoes
- Tinned tomatoes
- Chilli
- Red or White Onion
- Garlic
- Coriander (Optional)
- Lemons
- White Wine
- Celery
- Garlic oil or Olive oil
- Celery Salt
- Garlic Granules
- Onion Granules
- Smoked Paprika
- Cayenne Pepper
- Salt
- Black Pepper
How to make: Portuguese Seafood Cataplana
- Wash and prepare the seafood you have chosen, devein prawns, wash clams thoroughly and cut the monkfish into pieces
- Chop peppers, onions tomatoes celery chilli , coriander and grate the garlic
- Wash rice and add to a pan with water, simmer for as long as the guidelines state on your rice packet, or just keep trying it until it has cooked to your liking
- Then to a pan or if you have one a Cataplana pan add garlic oil or olive oil with the celery, garlic and red onions and cook for a few mins
- Then add salt, pepper, smoked paprika, onion granules, garlic granules, cayenne pepper, coriander and chilli (fresh or flakes)
- After a few minutes add the tomatoes and peppers and cook until they soften on a medium heat
- Once the peppers are soft-ish using a potato masher or fork, mash everything slightly
- Then add the tinned tomatoes and white wine, stir, wait a few minutes and taste, adding more seasoning if needed
- Add all the seafood and cover the pan on a medium/low heat
- Once the seafood is cooked (clams and mussels have opened, Prawns are white/pink/opaque) garnish with lemon wedges and coriander, serve with the rice and enjoy.
